Bread made with caraway seeds. This is the heel of the loaf, known as Der Kanten in German, with numerous regional names in Germany. The heel will become stale sooner than the core of the bread, thus it is important in bread sales to not waste consumer's money with too much of this part of the bread. A stale heel can be revived by soaking in water, which reduces the usefulness it.
